Wild Alaska Salmon with Chilli and Garlic by the Alaska Seafood Marketing Institute

This Chinese New Year, why not try something a little on the wild side – with this fabulous recipe from the folks at the Alaska Seafood Marketing Institute. Punctuated with crunchy Chinese leaves and spicy red chillies, the oriental flavours complement the delicious natural taste of wild Alaska salmon perfectly.

Wild Alaska Salmon with Chilli and Garlic

Ingredients
  1. 4 x 150g (6oz) fillets wild Alaska salmon
  2. Two tbsp olive oil
  3. 2 cloves garlic, thinly sliced
  4. 1 large red chilli, thinly sliced
  5. 1 bunch spring onions, trimmed and sliced
  6. 4 generous handfuls fresh spinach
  7. 1 head Chinese leaves, sliced
  8. Dark soy sauce, to season
  9. Salt and freshly ground black pepper
Instructions
  1. Brush the fillets of salmon with olive oil
  2. Preheat a char-grill pan or heavy-based frying pan. Add the salmon fillets and cook over a medium-high heat for about 3 minutes per side, adding the garlic, chilli and spring onions after 3 minutes
  3. Put the spinach and Chinese leaves into a large saucepan and add a little boiling lightly salted water. Cover and cook for 4 or 5 minutes until wilted. Drain well
  4. Pile the wilted leaves onto four warmed serving plates and arrange the salmon fillets on top, along with the garlic, chilli and spring onions. Season with soy sauce and black pepper, then serve immediately
