Wagon Wheels have been a firm lunchtime favourite for more than 65 years. Now Chef Jesse Dunford Wood of Parlour bar is bringing it back into fashion with his modern twist on the family favourite. This recipe gives you the chance to have a go at making them yourself.

Bringing back a family favourite with a modern twist.
For the cookies
- 390g Plain Flour
- 10g Vanilla extract
- 2 Eggs
- 65g Butter
- 65g Soft Dark Brown Sugar
- For the chocolate spread
- 140g Cream
- 40g Brown Sugar
- 50g Dark Chocolate
Instructions
- Preheat oven to 180’C
- Mix together the sugar, flour, and salt, then add the eggs and vanilla. Stir until well combined.
- Roll into balls, and cook at 180’, until flat, golden and crisp (10-30 mins)
- Bring the cream to the boil with the sugar, then fold in chopped chocolate.
- This needs to be chilled to be the right consistency. Then you can spread it on the cookies.
- For each portion, 2 cookies, spread with the chocolate mixture, and buy some marshmallows to cover one of the cookies. Blow torch the marshmallows, and then squash the 2 sides together.
- There you have it a toasted marshmallow wagon wheel. But of course!
