I don’t always eat pancakes, but when I do…

Did you have fun last Shrove Tuesday? I know I did. I ‘replenished my glycogen stores’ with a whole load of these…

I’m not particularly good at baking (for that look to Dan or Bryony respectively, our baking experts), so you know that when I come up with a recipe it’s going to be relatively simple (minimal ingredients, minimal steps involved – for my minimal brain and minimal attention span)
Gluten free is a pretty popular option at the moment, and last Shrove Tuesday I wanted to go to town on some authentic tasting pancakes, minus the gluten (since by many accounts Gluten is The Devil’s Turd). Rice and rice flour have always been handy ‘go-tos’ in such situations, and a few variations on this recipe have helped me get my pancake fix over the years.
Note: Using coconut milk (I used Tropical Sun’s Coconut Milk Powder) is pretty handy because negates the need for milk, so this recipe is also suited for people who are sensitive to dairy (i.e me).


- Contents of one envelope Tropical Sun powdered coconut milk mixed with 165 ml cold water
- 125 grams rice flour
- 1 egg
- Butter/olive oil for frying
- 20cm non-stick frying pan and a palette knife or non- stick fish slice
- Steens Manuka honey, or similar yummy stuff to spread on your pancakes.
- Add coconut milk to water and stir 'til dissolved and you have what looks like regular coconut milk.
- Whisk the rice flour and coconut milk together until smooth.
- Drop a hazelnut sized piece of butter into the frying pan and turn the heat up high.
- When butter is melted and runny, run it around the base of pan, to coat.
- Pour a little of the batter (a small ladle full) into the hot pan and run the batter round to coat the pan.
- Give it a minute to start to set on the bottom of the pan, and shug it round a bit so it doesn’t stick.
- If it does, loosen it with a palette knife or non- stick fish slice so that it slides around easily.
- Use your palette knife/fish slice to lift the pancake from the pan and flip it over; give it another minute, keep shugging it about and then slide it onto a plate. That’s it.
- Spread with the honey and either roll into a tube and cut little cylindrical pieces, or fold into quarters and eat with your hands :3
- In the past I have used thinner coconut tinned coconut milks instead of the powder, or diluted thicker varieties until they resemble a thinner coconut milk...
- Once your pan is hot, the pancakes will cook really quickly, you will need hardly any butter or oil and they’ll be done in about a minute each.

I served mine with some Steens Manuka Honey, Golden Acre Quark soft cheese (as I had no yoghurt) some walnuts and a dash of cinnamon. At some point I even found some blueberries that I mashed into the honey. I was too busy eating them to photograph it.
This is, perhaps, a semi healthy option – or would have been if I hadn’t used a third of a jar of honey in the process :3
