Recipe – Chicken Peanut Satay Skewers by Amoy

We love Chinese food and with the Chinese New Year coming up on 19th Feb, what better way to celebrate than with some home-cooked Chinese food. This fab recipe from Amoy shows you how to take chicken satay to another level, by adding some great extras to their satay sauce – prepare to wow your dining companions!

Ingredients
  1. 2 x 300g packs Amoy Straight to Wok medium noodles
  2. 2 sachets of Amoy Peanut Satay Stir Fry Sauce
  3. 1/2 x 400ml can Amoy Reduced Fat Coconut Milk
  4. 4 tbsp Amoy Reduced Salt Soy Sauce
  5. 1 - 2 tsp chilli flakes
  6. 4 chicken breasts, cut into cubes
  7. 1 red onion, chopped
  8. 150g mangetout, sliced (a handful)
  9. 150g baby corn, sliced (a handful)
  10. 1 red pepper, chopped
  11. 1 tbsp vegetable oil
Instructions
  1. Mix Amoy Satay Sauce with Amoy Coconut Milk, Amoy Soy Sauce and chilli flakes.
  2. Thread the chicken onto 8 skewers and grill for 8-10 minutes until cooked, basting with half of the satay coconut sauce.
  3. Meanwhile stir fry the vegetables in a hot wok with the oil until tender. Add the noodles and remaining sauce and cook until the noodles are separated.
  4. Serve the noodles with the skewers on top with any sauce from the grilled chicken.
Notes
  1. If using wooden skewers soak in water for 20 minutes to prevent them from burning.
