Dark Chocolate Espresso Martini

For this recipe you will need to use vanilla infused vodka. To infuse, just cut the head off both ends of a vanilla pod and scoop out the seeds into your favourite bottle of vodka, add the pods into the bottle too and leave to infuse for 4-5 days at room temperature.

Ingredients
- 100g Dark Chocolate
- ½ tbsp Semi skimmed milk
- ½ tbsp Double Cream
- 35ml shot Espresso
- 50ml Vanilla infused vodka
- This sauce will make 4 servings of sauce, add an addition 35ml per person of vanilla vodka to complete the cocktail (140ml total)
Instructions
- To prepare the sauce, melt the chocolate using a bain-marie, once all of the chocolate has melted, add in the milk and double cream and stir. (To make the cocktail lighter, you can substitute the cream with almond or soya milk).
- Add a shot of espresso (or two shots for an extra kick) and 50ml of Vanilla infused vodka, to ensure the sauce remains at the right consistency.
- Chill the sauce in the fridge for 20-30 minutes.
- Once the chocolate sauce becomes thicker, pour the cocktail ingredients into a shaker over cubed ice and strain into a chilled martini glass, garnish with grated dark chocolate, 70% Valrhona works best
