Rake to take up residency at The Gun, Hackney

The Gun pub in Hackney has announced Rake has its new residency, opening on 13 July. 

The team, also behind The Compton Arms, has hosted chefs such as Four Legs, Ling Lings and Tiella.

The new concept, Rake is operated by three chefs – Jay Claus, Peter Ward and Syrus Pickhaver – with a combined 30 years in the industry at establishments such as Quo Vadis, BRAT and Acme Fire Cult. 

Rake will place focus on whole beast butchery and sustainable Cornish fish.

Menus reflect Rake’s core values; the quality and seasonality of produce with minimal fuss and skilled technique. 

Guests can expect both classic and long-forgotten recipes revitalised and modernised, like the stargazey pies with rich mushroom gravy. 

Bastardised European and American dishes like the Chicken-Fried-Dory, where flavourful, fatty fish is buttermilk battered and deep fried, is somewhere between fish and chips and KFC. 

There are also playful takes on English and French classics such as a Garibaldi Mille Feuille and cheesy puffed pork crackling-like giant quavers. 

The ever-changing menu will expand in due course to include a bar menu. 

Each Sunday, there will be a weekly changing roast meat with Yorkshire puddings, roast potatoes and white cabbage choucroute.
