To mark National Sausage Week (27 October – 2 November), acclaimed Indian restaurant KOKUM has joined forces with local butchers Flock & Herd for a collaboration that gives the humble British sausage a fiery Indian makeover.
At the centre of the partnership is the Bombay Banger, a spiced sausage infused with Chettinad Masala, a blend of cumin, coriander and cloves that delivers smoky depth and a signature South Indian kick. The dish will be served at KOKUM with Masala-Spiced Wedges and tangy Indian mayo, spotlighting the best of both British and Indian comfort food traditions.
The Bombay Banger also stars in two limited-edition specials: the Indian Sausage Roll, wrapped in golden pastry and paired with tandoori-spiced ketchup; and the Sausage Seekh Kebab, grilled over charcoal in the tandoor and served with cooling mint and coriander chutney.
For those wanting to recreate the flavours at home, the Bombay Banger will be sold directly at Flock & Herd’s South London butchery for £14.99 per kg, with all profits donated to Southwark Food Bank.
