In celebration of London Craft Week, Japanese-Middle Eastern restaurant JIJI is collaborating with craft gin brand KI NO BI at Islington Square on Octover 5.
Chefs Bubker Belkhit and Jeremy Borrow have curated three courses of unique Japanese dishes to pair with one cocktail per course, crafted with KI NO BI, the Kyoto-based gin meticulously distilled with Japanese botanicals.
KI NO BI translates as ‘The Beauty of the Seasons’, and all of their gins are designed with harmony in mind. The gins are made and bottled at the Kyoto Distillery, Japan’s first dedicated gin distillery producing craft gin to be made in the city.
It is a small-batch, artisanal gin that uses high-quality rice spirit and 11 botanicals including juniper berry, orris, hinoki, yuzu, lemon, green tea, ginger, red shiso leaves, bamboo leaves, sansho pepper and kinome.
The menu, created in collaboration with KI NO BI, will include sushi dishes, family-style starters; mains such as sando schnitzel or miso salmon; and a selection of sides.
Desserts include a choice of malabi, ice cream mochi or vegan sorbet.
