FishWorks’ head sommelier Tim McLaughlin-Green will host ‘A Plaice with Sole’ on October 19.
The event will feature a five-course dinner with paired small batch wines showcasing the best of the noble fishes, British plaice and sole.
Dishes include a crostini of sweet, pickled peppers and sole trimmings, paired with sparkling wine, before a starter of Plaice for Sole ceviche, served with Riesling. Next, fried fillet of Megrim sole, with a Chardonnay-soaked sultana salad and salsa verde, followed by a Dover sole Veronique. Both courses are served with Soave and full-bodied Chardonnay.
