Aquavit London has launched its Scandi Supper Club Series, taking place the last Friday of every month in the restaurant’s Copenhagen Room.
The supper club will feature a 12-course menu that takes diners on a journey through the Nordics.
Guests will be guided through each course by Sous Chef Gianmarco Abramo.
Dishes have been designed to encapsulate a moment in his life; from the changing of the seasons, to fileting halibut with a dear friend, each plate will tell a unique story.
Expect Nordic plates such as breaded halibut cheek served with hovmästarsäs, a dill-scented mustard sauce and pickled chilli, rich bone marrow with traditional Knäckebröd baked flatbreads and a micro herb salad.
For the main, lamb rump with yoghurt snow, lamb jus, and fermented wild garlic; and lobster tail served with a lobster-filled courgette flower and a pork and lobster sauce are offered.
Other dishes include the ‘pickled herrings in four seasons’ – pickled herring fillet served four ways – inspired by Italian composer Vivaldi’s best-known work ‘The Four Seasons’; a pre-dessert horseradish sorbet; and fried doughnut coated in tarragon sugar, filled with cloudberry jam and ricotta.
The 12-course tasting menu at Aquavit London is priced at £150 per person, with an optional drink pairing available.
