Galvin at Windows and Turnips launch new vegan menu for World Earth Day

London restaurant, Galvin at Windows one of Borough Market’s oldest greengrocers, Turnips have combined their culinary expertise to serve up a six-course, sustainable vegan tasting menu, in line with World Earth Day on April 22.  

The menu was unveiled at a special launch on April 14 at Galvin at Windows by head chef Marc Hardiman (formerly at The Ritz Hotel) and Turnips chef patron Tomas Lidakevicius (formerly of City Social) who elaborated on the collaboration and dishes.  

Following the Turnips ingredient-led ethos, the duo have created three dishes each, showcasing seasonal fruits and vegetables.

Marc’s dishes include dishes of asparagus, morel mushrooms and nettles and celeriac ribbons, mint and capers alongside
a dessert of coconut crème, macerated berries and lemon verbena.

Tomas’s offering includes Jersey royals, maitake and Italian broad beans, Laudani farm blood orange accompanied with tapioca and Italian outdoor Merinda tomatoes with wild garlic pesto, with the tomatoes supplied by Turnips for the duration of the menu.

Head Sommelier Rudina Arapi has selected a variety of vegan and organic wine pairings. 

Marc said: “We are so excited to be collaborating with Turnips this Spring, inviting Tomas back to the Galvin at Windows kitchen for the launch. Operating for more than 30 years as a greengrocer, the team at Turnips shares our passion for the best of British produce, with this latest evolution of our menu showcasing how hard we’re working to evolve
our plant-based offering for guests.”

The menu will be more widely available from Earth Day, April 22  to May 29 served during lunch and dinner service Wednesday to Saturday at £99.00 per person for six courses including matching wine arrangement, as well as £65.00 minus pairings.
