To help save the nation’s waistlines this January, Warburtons has teamed up with East London street restaurant, Caboose, to create the Thinwich, a light, vibrant and tasty sandwich alternative using Warburtons’ low-calorie Sandwich Thins as a base. Try your hand at this tasty sandwich, but be careful – the salsa verde is addictive!

The Thinwich

This light, fresh twist on a traditional sandwich will bring back the joy of eating bread while letting you stick to your New Year health kick

Ingredients
  1. 1 pack Warburtons Sandwich Thins
  2. Smoked chicken (weight needed depends on how many you want to make)
  3. Red onion, finely chopped
  4. Handful of oak lettuce
  5. Celeriac
For the salsa verde (makes enough for 5-6 sandwiches)
  1. 1 clove of garlic
  2. 2 tsp capers
  3. 1 tsp anchovy fillets
  4. 40g parsley
  5. 25g basil
  6. 20g mint
  7. 1 tbsp sherry vinegar
  8. 3 tbsp virgin olive oil
  9. lemon, sea salt and ground black pepper to taste
To make the salsa verde
  1. Take the fresh parsley, basil and mint leaves and blitz in a blender together for 30 seconds
  2. Add capers, garlic and fresh anchovy fillets to the blender and mix until they are fully blended
  3. Add a squeeze of lemon and the sherry vinegar, before mixing and decanting the contents into a bowl
  4. Add the olive oil, mix and then season with salt and pepper to taste
  5. Leave this to stand for 30-45 minutes before serving
  6. Note - the salsa should keep in the fridge for 3-4 days
To assemble the sandwich
  1. Use smoked chicken (or normal if smoked isn't available, but it isn't as tasty) from a local smokehouse, deli or supermarket
  2. Pull the meat apart from the bone using a fork and toss in a bowl with the salsa verde
  3. Heat a griddle pan to hot. Lightly brush the thinly sliced celeriac with olive oil and cook on the griddle, turning occasionally, for around 3-4 minutes or until tender
  4. Lightly toast a Warburtons Sandwich Thin
  5. Layer up your Thin with the lettuce, salsa verde chicken, grilled celeriac and finish with a sprinkling of finely chopped red onion
  6. ENJOY!
