The Thinwich

This light, fresh twist on a traditional sandwich will bring back the joy of eating bread while letting you stick to your New Year health kick

Ingredients
- 1 pack Warburtons Sandwich Thins
- Smoked chicken (weight needed depends on how many you want to make)
- Red onion, finely chopped
- Handful of oak lettuce
- Celeriac
For the salsa verde (makes enough for 5-6 sandwiches)
- 1 clove of garlic
- 2 tsp capers
- 1 tsp anchovy fillets
- 40g parsley
- 25g basil
- 20g mint
- 1 tbsp sherry vinegar
- 3 tbsp virgin olive oil
- lemon, sea salt and ground black pepper to taste
To make the salsa verde
- Take the fresh parsley, basil and mint leaves and blitz in a blender together for 30 seconds
- Add capers, garlic and fresh anchovy fillets to the blender and mix until they are fully blended
- Add a squeeze of lemon and the sherry vinegar, before mixing and decanting the contents into a bowl
- Add the olive oil, mix and then season with salt and pepper to taste
- Leave this to stand for 30-45 minutes before serving
- Note - the salsa should keep in the fridge for 3-4 days
To assemble the sandwich
- Use smoked chicken (or normal if smoked isn't available, but it isn't as tasty) from a local smokehouse, deli or supermarket
- Pull the meat apart from the bone using a fork and toss in a bowl with the salsa verde
- Heat a griddle pan to hot. Lightly brush the thinly sliced celeriac with olive oil and cook on the griddle, turning occasionally, for around 3-4 minutes or until tender
- Lightly toast a Warburtons Sandwich Thin
- Layer up your Thin with the lettuce, salsa verde chicken, grilled celeriac and finish with a sprinkling of finely chopped red onion
